The new hot rocket varieties have intense flavour. They are slightly darker and faster growing than standard rocket varieties and have a strong mustard like flavour. The leaves can be eaten raw or cooked, they can give a real life to dishes if some leaves are added to dishes just before the end of cooking. Grown in the winter season under cover in Italy and in the summer in the UK.
